    I am gaining weight just looking at these pictures, the antelope sausages look incredible , how long you smoke'm ?

    I mostly watch the internal temp until it gets to 160. Usually smoke them around 3-4 hours and rotate treys at about 2 hrs. If they reach temp but dont look smoked enough I turn off the heat and cold smoke them a bit longer.

    I have Antelope Bratwurst with jalopena in them but I have only grilled them not smoke'm. Thanks I going to smoke some with hickory chips maybe.

    U usually smoke about 1/2 of the sausage I make and keep the rest fresh. Nice to have some of both!
